Recipe: Enchilada Dip

I was asked recently to post a recipe of mine. And, at first, I though – how strange, that’s not really the purpose of this site, but then, why not? We’re sharing information – why not recipes. And if you don’t care about food, just skip them. For those who do want to peruse, I’ll be tagging all recipes as “recipe,” so just click on that tag in the left-hand column and you’ll come up with everything posted. This is the first – not the one that was requested of me (can’t remember which one it was), but one that I requested from a Canadian friend… it is delicious!

Chicken Enchilade Dip

1 pound chicken, shredded
1 8oz cream cheese
1 c. mayo
1 c. shredded cheedar cheese
1 can diced green chiles
1 jalapeno pepper

Mix all ingredients. Bake 30 minutes until bubbly 350 degrees.

“I added some ingredients to the receipe because I thought it was too bland. I poached the chicken with taco seasoning. I added a can of rotel tomatoes. I added more jalapeno, but it depends on the strength of the pepper. I also used half mayo and half sour cream. I used my food processor to mix it altogether and I would not do that again. The chicken was too chopped up and gave it a strange texture, which I did not care for. You could use a crock pot to keep warm or a fondue pot.”
